Ingredients
• 2 tablespoons chia seeds
• 1/2 teaspoon almond or vanilla extract
• 1/4 teaspoon ground cinnamon
• 1/2 cup filtered water

Preparation
In a small bowl, mix all ingredients together with a spoon. Cover and let sit for 10 minutes. This will become thick, like the consistency of pudding. It is ready to eat. You can also leave it in the refrigerator overnight. Chia seeds absorb large amounts of liquid. If the pudding seems a bit dry, you can add more water. You can eat this at room temperature, warm or cold. If you would like it warm, it can be heated on the stove top over low to medium heat for 3 minutes.
